I love watching videos and recipes made by Chef John! They are so enjoyable and sprinkled with his corny humor, but his food is also GREAT! I now make a half recipe of his dipping sauce in place of the one that I use to years ago. Here’s the video for the full recipe.
Thai Peanut Dipping Sauce (Gluten Free)
Makes: 3/4 cup Serves: 4-6
6 Tbsp smooth, natural peanut butter (homemade or store-bought)
1 clove garlic, minced
1 Tbsp brown sugar
1 tsp toasted sesame oil
1/4 wedge lime, juiced
1/3 cup canned coconut milk
2 tsp red bell pepper, chopped
2 tsp fresh cilantro, chopped
2 tsp peanuts, chopped
Prep: 15 min | Cook: 5 min | Ready: 20 min
Place peanut butter in a mixing bowl. Whisk garlic, brown sugar, fish sauce, soy sauce, and sesame oil into peanut butter, followed by lime juice and chile garlic sauce.
Bring the coconut milk to a simmer, in a small saucepan, over medium heat; pour over into peanut butter mixture. Whisk until smooth.
Transfer to a serving bowl and garnish with chopped red pepper, cilantro, and peanuts. Cover and refrigerate any leftover sauce up to 3-4 days.
