Beets, carrots, celery, lime juice (and then some…)

NEVER tasted better than when juiced and combined together to make this Ruby Red Beet Juice. I LOVE beets, but those who normally don’t, say they also enjoy this vitamin-rich and exceptionally flavorful beverage. Juicing is such a wonderful way to start your day!

Needed Convincing First

My daughter-in-law, Melanie loves juicing and feels so much better herself when she consistently juices. I might add, she’s converted many a skeptic.

Oh good grief, I didn’t desire any expensive (or inexpensive) juice extractor. To say the least, one more bulky appliance in my already large repertoire!

Then there was that haunting memory of mine, back from 70’s, while sunbathing on the back deck with my girlfriend. We were sweltering in the HOT sun when her sweet mother came out with NONE OTHER THAN two tall shimmering glasses of “ice cream” ORANGE  sodas!

When I took the first two BIG slurps of my straw… Aargh!!! A dramatic GAG REFLEX overtook me when contents hit the back of my throat.  I was extremely embarrassed because it was so unintended. I did NOT expect it to be straight “CARROT JUICE”!  Well, my friend had been raised on it, and she seemed to like it. She was laughing her guts out, all the while I desperately tried (politely for her mom’s sake) to keep mine in!

Delicious Juicing Combo

Happy to say, my daughter-in-law (and my daughter too) were both determined to change my past mindset regarding juicing.

One day, Melanie showed up armed with her juicer, lots of beautiful produce, and several delicious recipes. They finally won me over, now I LOVE juicing too.

Ruby Red Beet Juice

Ingredients

  • 4 lg carrots unpeeled
  • 2 lg ribs celery
  • 1 lg kale leaf
  • 1 lg green apple cored - unpeeled
  • 1/2 fresh beetroot unpeeled, add some greens
  • 2 sm oranges unpeeled "Cutie-size"
  • 1/2 half lime with rind
  • Pinch of turmeric optional
  • Ice cubes

Variations:

  • 2 handfuls fresh baby spinach
  • 1 pineapple spear rind removed
  • 1/2 lemon unpeeled
  • 1 chunk fresh ginger
  • Handful parsley

Instructions

Fully wash produce and juice in a HIGH power juice extractor. Stir, adding a just a pinch of turmeric for good health. Add ice and serve within 15 minutes for best nutritional benefits. 

Sit back... drink up and relax!
