Orange Vinaigrette Dressing

A citrus dressing that’s NOT overly sweet… 
nor sour… but with a subtle ASIAN FLAIR!

Now there are recipes on Youtube and ones that I make too, where you just add the oil all at once, but for this one… I prefer to almost dribble the oil in… which looks like a pain – but it pays off with a more commercial-like dressing results.

Citrus Chicken & Marinade

I’ve love this 5 STAR marinade recipe for years and YEARS! I have adapted it to meet my needs, but it tastes still very close to the original.

4 breast halves, pounded evenly
1/4 cup brown sugar [or Whey Low Gold]

3 Tbsp olive oil
2 Tbsp cider vinegar
1 Tbsp Dijon mustard, Country-Style
1 Tbsp fresh lemon juice
1 Tbsp fresh lime juice
1 tsp minced garlic
1 tsp Sweet Ginger (Homemade), (so delightful… add 5 stars!)
1/2 tsp salt
1/4 tsp ground black pepper

Combine ingredients, chill and marinate for about 2-4 hours.Read the rest

Paella Spanish Rice, Traditional or “Veggie-Style”

This is a wonderful savory paella. My family says it’s the best rice dish ever!

All you need, is a large covered skillet to make this fabulous paella.

Traditional Paella rice is served with shrimp and chicken, (plus expensive saffron, which I don’t add) anymore. 

I usually make ours VEGGIE-STYLE, served with fish; my family adores it that way with my Maple Glazed Salmon recipe. Being a rice dish, makes it gluten-free and the flavors are incredibly delicious!
