I have loved this recipe for several years! 

The crispy coating is made from Japanese Panko breadcrumbs, which are made from bread without crusts.

As much as I have adored making this recipe with the Panko, I have found even a BETTER WAY to make this recipe and it’s now 

GLUTEN FREE

Roasted Tomatillo Salsa: Killer EASY

Roasted Tomatilla Salsa

Olive oil spray (or regular)
1 lb tomatillos, husks removed and rinsed
3-4 garlic cloves, unpeeled
1 med onion, peeled and quartered
1 jalapeno pepper, cut in half lengthwise
(seeded or not)
2 green onions (cut into 2-inch pieces)
1 fresh lime, juiced*
1/2 cup cilantro, chopped
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
